Marzipan-Poppyseed Crepes with plum compote

These crepes are delightful and simple delicious. I use spelt flower and low raw sugar to make this divine dessert.

What you need:

1 cup or 250 ml Heavy cream

2 Tbsp melted unsalted Butter (extra for pan)

1/2 Cup or 100 gr. Spelt flour

2 Eggs

Pinch of salt

1 Tbsp raw sugar

60 gr or 2 oz of soft Marzipan

3 Tbsp poppyseeds

3 Tbsp fizzy Water

1 tsp ground cinnamon

2 Tbsp honey

1 pound or 500 gr. fresh plums, washed, pitted, cut in wedges.

In a pot add the plums, honey, cinnamon . Cook them on medium-low heat for about 10 min, then set them aside and let the compote cool off. In a bowl mix the poppyseed, Marzipan together with the heavy cream and 3 Tbsp of Water. Once everything is well combined, add the flour and mix it well. Let the dough rest for about 10 min. Afterwards add the rest of the ingredients to the dough and mix again well. In a pan greased with butter and set to medium heat, bake your crepes. I add the dough to the pan and than rotate the pan in circular motions so I get a nice round shape and the dough is evenly distributed. Bake on both sides. Serve immediately !
