Oven-Roasted Garlic Tomatoes

These Oven-Roasted Tomatoes are very simple but seriously delicious. With the process of slow roasting them, they will get this sweet and savoury deep flavor of the herbs, garlic and tomatoes. It’s perfect as pasta sauce, soup or on crusty toasted bread and are easily preserved for future use.

What you need:

1 Pound or 500 gr of fresh Tomatoes (washed, stem taken out)

1 fresh Garlic Bulb (washed)

1 large Red Onion

large fresh twigs of Oregano, Basil, Tyme (about 2 each)

Good quality Olive Oil about 4-5 Tablespoons

2 tsp of Salt

1 tsp ground black Pepper

Preheat the oven to 400°F or 200 C. Cut the tomatoes in half (lengthwise), as well the Garlic bulb. Cut the ends of the large red onion and peel it, then quarter it. In a large enough ovenproof deep dish, place the tomatoes, garlic and onions layered beside each other (cut side up). Drip the Olive oil over the vegetables, then season with salt and pepper. Lay the fresh herbs on top. Roast it for about 40min. to an hour. When they have a roasting colour, they are ready to take out. Afterwards either use them as topping on crusty grilled bread or blend the roasted tomatoes, onions, garlic in a blender. Proceed as you need for your personal use, such as sauce or to preserve it, or to go ahead and make a soup. Check the Video down below to see how i made it 🙂
