This Greek Macaroni Salad is one of my favourite pasta salad recipes. It’s an easy recipe that is always a hit at a picknick or at a barbecue. A healthy and light but tasty fresh Salad!
What you need:
7 oz or 200 gr. short Macaronis
1 red Onion
1 middle size Courgette, washed, quartered and cut into bite size chunks
1 small size Aubergine, washed, quartered and cut into bite size chunks
5 oz or 150 gr. Sheep’s milk cheese (Feta cheese)
7 oz or 200 gr. Cherry tomatoes, washed
Juice of 2 large Lemons
3 oz or 60 gr. Rocket salad, washed and roughly chopped
a bunch of fresh flat Parsley leaves, chopped
1 large Garlic clove
6 Tbsp Olive Oil ( and extra for sautee)
1/4 tsp Black Pepper
1/2 Sea Salt
5 oz or 150 gr. black Olives
Cook the Macaronis as instructed in the Water with 1/2 tsp salt. Drain them afterwards. Chop the onions finely. In a bowl add the olive oil, lemon Juice, salt & pepper, and press the garlic inside. Mix all well together, and set the dressing aside. Sautee the courgette and aubergine in a little olive oil over high heat, until they are softly browned. In a bowl add the pasta, the cherry tomatoes, the rocket salad, the olives, the onions, the parsley and the dressing. Mix well, so all is covered with the marinade. Crumble the cheese over the salad, and mix again. Let it marinate for at least 3-4 Hours in the fridge. Taste it if you need more salt or pepper.
