These little colorful pretty little bites are full of natural berry flavor. The Pistachios give them a crunch and the berries a tasty tart to the sweet meringue . These Bites are amazing just as they are or crumbled over Ice cream.
What you need:
3 eggs
Powder Sugar, double the amount of powdered sugar of the weight of your 3 egg whites
3 Tbsp. crushed Pistachios nuts
50gr. or 1oz Freezer Dried Berries and some extra to sprinkle on top ( i used bluebeerrys, raspberries, cranberries, blackberry)
Preaheat the oven to 90C or 200 F. Lay a baking tray out with a Parchment paper. Then i separate the egg whites from the yolk. Afterwards i weigh my egg whites and weigh the double amount of powdered sugar. Then i start fluffing up the egg whites with a mixer until they are really stiff. Then gradually mix in the powdered sugar until all is well combined and you have glossy stiff peaks.
In a blender, mix the dried berries until they are a fine powder. Mix in the berry powder to the meringue. With a teaspoon full of our berry meringue , set little bite-size balls on your prepared baking tray. Decorate them with the extra berries and the pistachios. Bake them for about 30-40 min. You will know when they are done when they are easy to release from the parchment paper. Best eaten the same day!
