Super easy 5 min Blackberry Tartlet

These beautiful little Tartlets are super easy and quickly made, in just 5 min. The Mint enhances the luscious taste of the Vanilla-Blackberry Tartlet. An absolute gorgeous Dessert.

What you need:

About 1 Cup or 150gr. Fresh ripe Blackberrys about

200gr. or 7oz Cold Vanilla Pudding (store bought or Homemade)

1 Egg

1/4 tsp Vanilla Paste

1 sheet of store bought Puff Pastry with Parchment Paper attached

2 tbsp Powder Sugar

1 tbsp freshly Chopped Mint

Preheat your oven to 220C or 425 F. In a bowl, crack your egg open. Add your Vanilla Pudding to the egg. Give it a good whisk, so all is well combined. Cut the Puff Pastry into Squares, leaving the Parchment Paper attached for an easy release. Fill the Squares into the Muffin Mold, and push it down to make a little Cup/Tartlet shape. Fill the Pudding into the Tartlets. Place 1 Blackberry in each centre of a Tartlet. Bake them for about 7-10 min, depending on your oven. Let them cool on a wire rack. Once they are cooled completely, top them with additional fresh berries. Dust them with powder sugar, and sprinkle the fresh mint on them. Best eaten fresh.
