Spanish Orange-Fennel Salad

This fruitful Salad is inspired by the Spanish Andalusian Region. This is a super tasty and refreshing Appetizer to serve your guests, as well belongs to the Categorie purifying Detox-Recipes. A delicious taste of Spring and Summer!

What you need:

1 large Red Onion

1 small garlic Clove

1/2 tsp freshly  chopped Chilli

1 tbsp of freshly chopped Mint

1 tbsp of freshly chopped flat Parsley

1 Fennel bulb

4  large Oranges

1/4 tsp ground cumin

2 tbsp fresh lemon Juice

4 tbsp of good quality Olive oil

1/2 tsp Sea salt

1/2 tsp Agave Nectar

With a sharp knife, peel the Oranges. Make sure to remove the bitter white skin of the Oranges as well. Then cut the Oranges in very thin slices, try to catch the Juice of the sliced Oranges. Either with the Slicer or with the Knife, slice the red onion and the fennel very thinly! In a presentable deeper dish, layer the fennel slices, then layer the Orange slices over the fennel and last the red onion slices. In another bowl mix the rest of the Ingredients together. Spread the sauce over the Salad and let it marinate for about 1 Hour in the fridge. When serving garnish with a little Parsley & Mint.
