Best of both worlds, granola and pancakes in one. These tasty clouds are sugar-free and are easy to freeze for a quick healthy breakfast.
What you need:
1 large egg
3/4 cup whole milk ( or almond milk)
1 cup spelt flour
3 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
3 tbsp melted coconut oil
1 cup of crunchy granola ( i used a coconut granola)
2 tbsp raw honey
1/2 cup fresh small strawberry chunks
Mix all ingredients together, except for the strawberries and granola, into a nice batter. Add the granola and the strawberries into the batter, stir but do not over mix the batter, just until all is well combined. Let the batter rest for 2 min. Cook your pancakes on medium heat on an unsalted buttered griddle. Serve Warm with butter and syrup of your choice.
