Sweet Oriental Breakfast Couscous

This sweet, healthy couscous is drizzled with warm honey and can be enjoyed for breakfast or anytime as a little snack. Optionally, you can add or switch the nuts and dried fruits to your preferences. I serve it always with a little fresh fruit, such as beautiful orange slices.



What you need:

1 cup couscous

4 tbsp rolled oats

2 tsp ground cinnamon

1/2 tsp ground all spice

1 tsp ground green cardamom

1 1/4 cup boiling water

2 tbsp unsalted butter

2 tbsp agave nectar

6-7 dates, roughly chopped

3-4 tbsp peeled, roughly chopped pistachios

2 tbsp raisins ( optional, use dried apricots)

4 tbsp natural clear honey, warm


In an bowl add the spices, couscous, oats and agave nectar. Add the boiling water and stir for 2 seconds. Cover the bowl and let the couscous soak for about 10-15. Meanwhile add the butter into a pan, heated to medium heat. Toast the pistachios for 1-2 min. Add the dry fruits with 2 tbsp water, keep stirring for about 1-2 min. Add everything to the couscous and mix well. Spread the couscous on to a serving dish and drizzle with the warm honey.




Tip: Instead of serving it with fresh fruit you could pour a little warm heavy cream over the couscous.
