This is the best gluten-free Plum cake out there! My recipe is very easy to make and is so tasty. Make it a bit more luxury by adding some whipped cream or Ice cream on top, and enjoy every delicious bite.
What you need:
2 1/4 cups of all-purpose gluten-free flour
1 cube of fresh yeast 0.6 oz or4 1/2 tsp of dry yeast
1/4 cup granulated caster sugar and 3 tbsp extra
1/2 stick of unsalted butter, melted + 3 tbsp extra
1/2 cup lukewarm whole milk ( or almond milk)
pinch of salt
1 small fresh egg, room temperature
1 tsp real vanilla extract or vanilla bean paste
1 tsp fresh lemon zest
1 tbsp ground cinnamon
2.205 Ibs fresh, washed,pitted plums, cut in half
Mix the milk,sugar, egg,salt,butter, vanilla extract or paste, lemon zest and the yeast together in large bowl. Add your gluten free flour and mix it with a hand dough mixer all together, until the dough comes nicely together. Cover the dough with enough space and airtight to let it rise & rest for about 45 min. Meanwhile lay a round baking tray ( i used a pizza tray) out with parchment paper, and heat the oven to 425 F or 220 C. Kneed the dough with your hands, and form a ball. Roll the dough equally out on the prepared tray, about 1 cm thick. Cover the dough with the plum ( in a circle), leaving no space. Mix the 1 tbsp cinnamon and 3 tbsp sugar together. Brush the plums with the extra Butter, and sprinkle the plums all over with all the sugar mixture. Bake for 15-20 min.
