They are moist, fluffy and just really delicious. They are called Birthday Pancakes, but are always yummy to eat.
What you need:
1 tbsp baking powered
1/4 tsp baking soda
1/4 tsp fine sea salt
1 1/2 cup all purpose flour
1 cup whole milk
3 tbsp unsalted melted butter + extra
1/2 cup fresh strawberry chunks + extra
1 egg, separated
2 tbsp agave nectar
2 tsp vanilla paste or real extract
3 tbsp colorful sprinkles
In a bowl mix all dry ingredients together. In another bowl mix the butter, agave nectar, egg yolk, vanilla paste and milk together, until all is well combined. Beat the egg white until you have fluffy stiff peaks. Add you wet ingredients to the dry, and mix until you have a thicker batter. Fold the stiff egg whites with a spatular into your batter. Fold in your strawberry chunks. At last, fold in your sprinkles. Melt unsalted butter on a griddle and cook the pancakes on medium heat. You know when to turn the pancakes, when you see air bubbles on the uncooked side, and slightly golden on the other. Sprinkle them with powdered sugar and serve them with additional strawberries.
Tip: Serve them with a little whipped cream on top.
