Lavender-Lemon Sugar

Lavender is an extravagant spice. As sugar it can be used in so many ways. Try it in Lemonade and in Iced Tea. Excellent if stirred into a berries compote and other Desserts. Great also for baking, like in Banana bread or cookies. This fragrant rich sugar, is a lovely gift as well!

 

What you need :

2 1/2 cups of caster sugar

10 tbsp fresh edible lavender blossoms such as, lavandula angustifolia (or 5 tbsp of dried blossoms).

Zest of 1 fresh organic lemon

Airtight jars

 

Take the 1/2 cup of the sugar and 5 tbsp of your fresh lavender blossoms and blend it quick in a blender or use a mortar and pestle, and grind it fine. Add the blended sugar to the rest of the sugar with the lemon zest and the remaining 5 tbsp of the lavender blossoms, and stir well with a spoon. Fill the sugar into the jars, and let the sugar rest for about 3-4 days before using. If you do not like to eat the blossoms, you can strain the sugar through a sieve. Use always just a little lavender sugar, cause it can be overpowering and a very strong taste if used to much, you can always add more!
