White Asparagus Avocado Salad

White Asparagus is known to be a delicacy. But not only is it a real treat, white asparagus is known for it’s healthy benefits. With the Avocado dressing, this turns into a real superfood.



What you need:

1 pound of fresh white asparagus

1 lemon

1 tbsp unsalted butter

1 tbsp sugar

1tbsp salt

1 ripe avocado

1/2 tsp salt

1 tbsp native olive oli

4 tbsp fresh chopped chives

1/4 tsp ground black pepper

1/2 pound green mixed salad

smoked salmon ( optional)


Take a wide deep pan and fill it with 4 cups of water. Wash the asparagus and peel it all the way around, starting 2 cm below of the tender tip of the asparagus and cut of at the end the wooden piece about 1 cm. Add the peel to the water in the pan. Add the sugar, butter, and salt to the water. Cut the lemon in half, and slice one half  of the Lemon into slices, add them as well to the pan. Boil the peel-lemon-water into a stock, for about 15 min. Strain the Stock and fill it back into a fitting pot, to simmer the asparagus for about 6-7 min ( depending on the thickness). In the meanwhile, add to a mixer the ripe avocado, the juice of  a 1/2 lemon, chives, olive oil, salt and pepper and 1/4 cup of the stock water. Blend away, taste it if you need more salt, if the salad sauce is to thick add more stock water. Serve the asparagus with the green mixed salad and salmon, drizzled with the avocado salad sauce.
