This superfood pasta is done in no time and great if you have no time on your hands, but yet want something healthy and delicious. A glas of a light white wine, makes this an elegant dinner.
What you need:
1/2 pound fresh halibut, cut into bite size
1 fresh garlic clove,pressed
1/2 cup unsalted butter, room temperature
1 pound fresh organic asparagus, cleaned, cut into bite size (discard the woody part)
3 tbsp fresh chopped chervil
3 tbsp fresh chopped chives
1/2 pound fresh tagliatelle
1/2 tsp fresh ground pepper
1 tbsp olive oil
1 tbsp fresh lemon juice
1/2 sea salt
Cream the butter with a fork, stir in the chervil, garlic, salt and pepper to the butter. Heat a pan with the olive oil, to a medium-high heat. Add the asparagus to the pan and stir-fry for about 2 min, then add the halibutt and stir-fry for another 2 min. Meanwhile, in a pot prepare the tagliatelle as instructed on the package. Add the lemon juice to the fish and asparagus. Now add the draind pasta and butter mixture to the pan. Blend all well together, so that the pasta is glazed with the herb butter. Taste it and see if you need a little more salt. Serve immediately.
Tip: Grate some fresh parmesan over the pasta.
