Mum’s Healthy Ketchup

Forget the sugary store bought ketchup. This healthy and sugar-free ketchup is super delicious.

 

What at you need for about 2 cups:

2,2 pounds of ripe tomatoes, washed and stalk removed, cut in junks

1 large garlic clove, peeled, finely chopped

1 inch of fresh ginger, peeled and finely chopped

1/2 cup of raw honey

1/4 cup balsamic vinegar ( preferably white)

1 ripe fresh pear, washed and cut in chunks

3 tbs fish sauce

3 tbs fresh orange juice

1 tbs sea salt

1 1/2 tbs mild curry powder

1/2 tbs black pepper

extra salt & pepper

 

In a large enough pot add all ingredients. Stir  occasionally and cook the tomatoes for about 1 hour, on medium heat. In a strong blender, mix everything until it’s smooth. Press the ketchup through a fine sive. Taste it, might need a little more salt & pepper. Let it cool off and fill it in your sterilized bottle. Keep the ketchup  in the fridge. Should be good for 2-3 weeks.
