The chilli olive oil gives this delicious Bruschetta a nice little attitude.
What you need:
3 larger meaty tomatoes, thicker sliced
4 thick slices of ciabatta bread
2 ripe avocados
5 tbs chilli olive oil
1 garlic clove, pressed
3 tbs aged balsamic vinegar
1/2 tsp salt
1/4 ground black pepper
1/2 tsp honey
5 tbs good native olive oil
Mix 2 tablespoons of the olive oil, with the garlic, balsamic vinegar, salt, pepper and honey together and set the vinaigrette aside. Heat a grill pan (or use a regular grill) on medium-high heat. Baste both sides of the ciabatta slices with the chilli oil, make sure it’s completely covered. Grill the slices on each side, until it has a nice colour. Take them out, set aside. Add 3 tbs of olive oil to your pan, set on high heat and grill each tomato slice from both sides ( for about 1 min each side). Assemble the bruschetta by mashing some avocado onto your grilled bread, adding the grilled tomato slices and baste it with the vinaigrette. Serve immediately!

Tip: add little herbs like basil, cilantro or parsley to the vinaigrette to change a bit the flavour.
