Spinach Tortilla Wraps

The perfect wraps to fill with veggies and other goodies. Substitute the wholegrain flour for gluten free all purpose flour, to make these tasty wraps gluten free.

 

 

What you need ( makes 6 ):

2 cups wholegrain flour

3 tbs extra virgin olive oil

3/4 tsp sea salt

1/8 tsp agave nectar

1/2 cup cold water

1/2 pound fresh, cleaned spinach leaves

 

In a bowl, mix the flour and salt together. Fill the water into a blender with the spinach leaves. Blend until all is fine puréed. Take  3/4 cup of the puréed spinach, and add it to the flour. Add the agave nectar and the olive oil as well. Kneed with your hands until you have a nonsticking dough about 5-10 min. Cover  the dough, and let it rest at room temperature for 30 min. Kneed the dough for 1 min again, before dividing into equal portions. Use a tortilla press or roll the dough out into thin circles. Heat a nonsticking pan to high heat. Once hot, lay your tortilla into the pan, and let it cook for about 30 seconds on each side. Keep warm  and covered until serving.

Tip: Add Herbs, garlic and other spices to give them a other flavor.
