French Brioche Muffins

These lovely Brioche Muffins, are fluffy and light, and taste like a regular full fat Brioch. These will make a special treat on your Breakfast or Coffe Table.



What you need:

1/3 cup of granulated sugar

1/3 cup of soft unsalted butter

4 1/2 cups all purpose flour

2 1/4 tsp dry yeast

1 cup warm milk

1 tsp vanilla bean paste or real vanilla extract

1 egg

1/2 tsp sea salt

2-3tbs granulated sugar for garnish

1 egg yolk


Prepare a muffin pan with cupcake liners or parchment paper. Mix the milk, egg, 1/3 cup of sugar, yeast, vanilla, salt in a bowl together. Stir until the sugar and the yeast has dissolved in the warm milk. Add the flour to a bowl, and add the milk mixture and butter to the flour. Mix with an electric dough hook, until you have a smooth and slightly sticky dough. Cover the dough and let it rise for about an hour at a warm place. After rising, mix the dough again. Measure the dough to equal parts, and fill it into your prepared muffin tin. Cover them with a damp kitchen towle, and let it rise for another  30 min. Meanwhile preheat your oven to 350F or 180C. Place an oven proof dish, filled with water, into the oven. Give the muffins an egg yolk wash and sprinkle them with the sugar. Bake them for about 20-30min, until they have a lovely color (depending on your oven )

Enjoy them with fresh fruit & butter, homemade  jam or a nice chocolate spread.
