Glutenfree Crispy Honey-Garlic Drumstick/Chickenwings

At anytime you serve these fingerlicking goodies, you can be assured they will be a huge success! They are more than just delicious.

 

what you need:

2.2 pounds of chicken drumsticks or chicken wings.

1 1/2 cup potato starch

1 tsp salt

1/2 tsp garlic salt

1 1/2 tsp black pepper

frying oil

 

what you need for the sauce:

6 fresh garlic cloves

1 tbs soy sauce

1 tbs fish sauce

2 tbs toasted  sesame oil

1 tbs sambal oelek

3 tbs brown sugar

1 tbs dark brown sugar

1/2 onion

 

In a large and high enough pot, hear your frying oil on medium heat. While the oil is heating up, clean your chicken and pat it dry. In a large enough bowl, mix your starch together with salt, pepper and garlic salt. Now coat your chicken  individually with the spiced starch, make sure everything is well covered and coated ( shake of any excess) . Keep the rest of the starch since we double fry and double coate the chicken. Once all coated, test if your frying oil is ready, by adding little starch to your oil. If it’s bubbly it’s ready (do not let it get to hot or the chicken will burn before it’s through). Now add your chicken  pieces. Fry your chickenwings for about 12 minutes and chickendrums for about 16 minutes (depending on the size of the chicken).  Take the chicken out and let it cool for about 5 to 10 minutes and then:  coate the chicken again with the rest of the  remaining starch, and fry until its lighty golden and crisp (depending on the size of your drumsticks and chickenwings about an additional 12 to 16 minutes).

 

Meanwhile  make the sauce :

In a blender, blend the onion with the garlic and soy sauce until you have a fine paste.  Add the paste and the rest of your ingredients into a sauce pan, and heat the sauce over medium-low heat. Cook for about 3 min, stirring the sauce frequently. When you are done frying the chicken and its golden, immediately glaze the hot chicken with the sauce. Mix well so all the fried chicken is covered in your  delicious sauce . Serve and Enjoy!
