As a snack for Movie and Game nights, or to gift someone with this special little yummy treat!
what you need:
2/3 cup sugar
1/4 cup water
1/2 cup corn kernels
1 tsp vanilla paste or real vanilla extract
3/4 ground cinnamon
1/4 sea salt
1/8 butter
additional ground cinnamon to dust
Prepare a parchment paper sheet on a baking rack. Add the oil into a large enough pot and set it over medium-low heat. Add the popcorn kernels and put a fitting lid on your pot. The popcorn will begin to pop after a few minutes. Shake your pot occasionally until most or all of the popcorn has popped. This should take about 5-10 min. (depending on your stove and pot). In the meanwhile, make the sauce, put the sugar and water in a small saucepan and stir. Place over medium heat until you have a caramel, that resembles the colour of a golden syrup (stay with your sauce, cause it will go from caramel to burnt really fast). Now add the butter, ground cinnamon, vanilla and salt. Quickly stir all well together so you can add the sauce to the still warm popcorn. Stir well to ensure the popcorn is well coated. Spread your coated popcorn onto the sheet of parchment paper, dust it with additional cinnamon and leave it to cool. Now it’s ready to be broken into pieces. Keep in an airtight container and consume within 1 week. Enjoy!
