Baked Sweet potato Hummus

This is a little twist of the traditional  hummus, but sure worth a try! It’s really delicious.


What you need:

1 medium size sweet potato, unpeeled

2 garlic cloves

1/2 small onion

4 tbs fresh cilantro leaves

1 fresh red chilli

3 tbs native olive oil

zest and juice of 1 lime

1/4 tsp cumin

1/2 tsp cayenne pepper

1  7.75oz can chickpeas, drained

salt & black pepper


Preheat your oven to 350 Fahrenheit or 180 Celsius. Wash your sweet potato, and pat it dry. Bake your potato in the oven until tender ( depending on your oven and size of the potato). Let it cool to touch and peel afterwards with your fingers, should be coming of easy. In a blender add your baked sweet potato with all your other ingredients and mix until you have a creamy consistency. Season with salt & pepper to your liking. Let it sit for 1 hour in the fridge, so it will better infused. Enjoy with quinoa chips, bread sticks, raw veggies,sandwiches or as a dip for grilled food!
