Bursting colors with super bursting Flavors, not to mention this is a superfood and healthy salad!
What you need:
1 cup uncooked quinoa
6 black grind Cardamon pods
1/2 tsp grind fennel seed
1 tsp lemon pepper
1 tsp salt
3 tbs pistachio oil
1 tsp agave syrup
juice of 3 limes
1/2 red onion, finely chopped
4 tbs cilantro, finely chopped
1/2 pound uncooked beetroot, peeled
2 medium size raw carrots, peeled
Cook your quinoa as instructed. Shred your carrot & beetroot and fill it into a large bowl. When your quinoa is cooked, give it a quick cold rinse, drain all the water and add it to the shredded vegetables. Mix all other ingredients together and combine with the salad. Mix all well together, taste it if it needs mor salt or lemon pepper. Let it marinade for 1 hour. Enjoy !
Tip: this makes a great side dish.
