A silky Rice Pudding with lovley flavor
what you need: 1/2 cup short-grain rice 1/8 teassp. saffron 8 oz of milk pinch salt 1/4 cup granulated sugar 1 tablesp. butter 2 tablesp. rosewater some cinnamon
in a strainer clean your rice with cold water, till the water is clear ( let the rice drip off all the water).in a small bowel add 2 tablesp. of hot water and dissolve the saffron in it.
add the milk to a non-stick pot with the pinch of salt, and bring to a boil. when the boil is reached, turn it down to a medium-low heat. add the dissolved saffron water, rice and sugar to the milk. cook the rice covered on low heat, till the rice is soft and has soaken almost all the milk up ( stir often).
when the rice is soft, add the butter and rosewater into it, stir and take the pot from the heat. fill your pudding in to bowls and sprinkle with cinnamon and serve either hot or cold.

ps: you can add toasted nuts like pistachios or almonds to it, as well raisins!
