One of my favorite ways to make and eat Humus
what you need:
1 can of cooked chickpeas flesh of 1 ripe avocado 1/2 onion 1 large garlic 2 -3 tablesp. of lemon juice 1/4 of a cup of peeled,chopped, toasted almonds 3 tablesp. native olive oil 3 tablesp. of fresh chopped parsley 1/2 teasp salt 1/4 teasp. pepper 1/4 teasp. cumin 1/2 teasp. paprika
in a blender add the chickpease, avocado flesh,onion, garlic, lemon juice, 1 tablespon of the parsley and half of the almonds. blend it all well until evrything is smooth and creamy. fill the humus into a bowl and add the spices as well ,the rest of the almonds and parsley, stir till all is well combined. taste it to see if you need more lemon juice or salt and pepper!
yummy as a dip, or with grilled chicken, or on a sandwich or raw veggies!
