A new kind of Salsa, that sure wont be disappointing
what you will need:
2 pounds sweet potatoes 2 tablesp. freshly chopped coriander 2 tablesp. of native olive oil juice of 3-4 oranges ( 3/4 of a cup) jucie and zest of 1 lemon 1/2 teasp. of sea saltheat oven to 350 fahrenheit ( 180 celsius). wash and dry the sweet potatoes, and bake them for 40 min in the oven, or till they done (can take up to 20 min longer, depending on the size). in the meanwhile heat the oil and garlic on low-middle heat. when you smell the garlic fragrance, add the orange juice, salt,lemon juice and the lemon zest. cook for about 3-4 min. when the sweet potatoes are done, let them cool of slightly.once the cooled a bit, peel them and cut them into bite size cubes. add the salsa and stir the potatoes in the salsa. let it sit for at least an hour. sprinkle with coriander.
