Broccoli Soup with Chicken and Garlic sourdough Bread Croutons

Cream of Broccoli Soup made Healthy



what you need for the soup:

2 tablesp butter

1/2 onion, chopped

1 clove garlic, pressed

1/4 teasp pepper

each a 1/2 teasp  fresh minced chives, parsley,thyme

1 1/2 cup cold hearty broth ( chicken or veggie)

1 cups milk ( you can use low fat, i took regular milk  for a richer flavor)

Salt (to taste)

4 cups chopped broccoli

2 tablesp flour

2 cooked chicken breast ( shred)


cook onion and garlic in the butter for 2 minutes. then add the flour. mix flour into the butter and onions until a rue begins to form.  then add the cold broth and milk, stir until its thicken up ( medium high heat). then add the spices, herbs, chicken and broccoli. cook for about 10 min until broccoli is tender, taste it to see if any more salt is needed. serve with the croutons.

ps: sprinkle some cheese over the soup like , parmesan or cheddar 😉


3 tablesp. olive oil

2 garlic cloves ( pressed)

1/4 teasp salt

1/4 onion powder

1/4 pepper

1/4 paprika

4 cups ( 1/2-inch) whole grain sourdough bread ( or white bread, what ever bread you prefer)

heat the oven to 350 degrees ( 180 celsius). layout an oven rack with parchment paper. whisk oil, garlic and spices together in a large bowl. add the bread cubes and toss until all are well coated. spread out on the rack and bake for 20-25 min. allow to cool before serving.
