Apple Pie Muffins

The Best of a Pie and best of a cake all in one

 

what you need:

2 cup sour apples, finely chopped ( granny smith works really well)
2 tablesp lemon juice
1 1/2 cups flour
3/4 cup brown sugar
1 teasp baking powder
1/2 teasp baking soda
2 teasp ground cinnamon
1/4 tsp salt
2 eggs
1 stick of butter, softened
7  tablesp milk
1/4 teasp nutmeg

 

wash the apples, peel, quarter and remove core. cut apples into small pieces.drizzle with lemon juice and split in half portion.
Preheat oven to 180 ° celcius or 350 fahrenheit. prepare your muffin tin . in a bowl add: flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and  set aside.
then in a bowl whisk the butter and sugar together till nice and fluffy.  add the eggs and whisk again. now add the flour mixture and stir quickly into the egg mixture , add the milk . stir for about 2 min. now fold in 1 half of the apple pieces. fill your muffin tin and bake bake for 25 minutes. let the muffins  rest for 5 minutes, then remove them from the tin and leave to cool completely.

 

apple pie topping:

1 teasp. apple pie spices ( i make mine fresh evertime i need it, but you can use store bought)
4 tabelsp. brown sugar
1 tablesp. butter

 

in a medium pan, heat the butter and add the other half of the apples. brown them for about one min. add brown sugar and spices and stir. cover the pan and let it cook on medium-low heat for 5 min until the apples are soft.  let the topping cool off.

 

frosting:

i used this pinterest recipe ( sorry there is no link to a web!), i  used a vanilla flavor and just used a 3/4 cup of milk to make it a bit stiffer

make a circle with your frosting and layer the apple pie topping in the middle of the frosting circle.
