Asian Salad

One of my all time favorite salads

 

what you need ( makes 1 plate):

1 pound cucumber

1/2 cup bean sprouts

1/2 cup lean pork boild in broth

1/2 cups fresh prawns peeled

juice of 1 lime

1 lime and 1 chili

1 tablesp. rice vinegar

1 teasp. dark brown sugar

2 garlic cloves ( pressed)

1 tablesp. chopped  asian basil

3-4 tablesp. fish sauce

1/2 teasp. salt

1 tablesp. sesame oil

salt and pepper to taste

 

 

cut cucumber lenghtwise into four parts. remove core and cut diagonally into thin slices. season with salt, toss and place in a colander to drain. boil the  bean sprouts in cooking water for 2-3 min, then drain. cut boiled pork into strings, the same size as the sprouts. in a pan heat up some oil. season the shrimp with salt and pepper and cook until the shrimps are dehydrated and cooked through ( do not over cook).

prepare the dressing by mixing together: fish sauce, vinegar, sugar, lime juice, finely chopped chili and garlic. it should be a sour, sweet, spicy and salty taste.

mix the drained, cucumber and bean sprouts together. add the pork and dressing, mix well and let it sit for 2 min. arrange on a plate, lay the shrimp on top and sprinkle with the asian basil.
