brine the chicken overnight ( this will flavor the chicken through the whole meat and can be used for almost any chicken recipe)
for the brine you need:1 cup kosher salt 1/4 cup sugar 5 cloves garlic 2 bay leaves 1/2 teasp. ground pepper 1 onion cut in half 2 cups water
bring everything to a boil, until salt and sugar are disolved. let it cool off completly. use a nonreactive pot or plastic container.
submerge the chicken in the brine and let it sit overnight.
for the sauce you need:1 ripe mango cut in small chunks 1 cup mango-chutney 2 garlic cloves minced 1 onion chopped 1 tablesp. oil 2 tablesp. lime juice 4 tomatos, peeled and cut in chunks 1/2 tablesp. tomato paste 1/2 teasp. salt 1/4 teasp. pepper 1/2 teasp. smooked paprika 1 tablesp dark brown sugar 1/4 garlic powder 2 tablsp. chopped coriander a pinch of nutmeg and cinnamon
heat the oil in a heavy pan, roast the onion and garlic for about 2 min. add all other ingredients, and cook the sauce until you have a nice thick sauce about 15 min ( stir often). let the sauce cool off, and blend to make it a smooth barbecue sauce.
grill your chicken until its almost about done, brush the sauce on….keep on grilling untill its lightly crispy, brush on a second layer and keep grilling some more until you have a nice sticky-crispy chicken … sprinkel with the coriander.
