Spanish Prawns

worlds best garlic gambas

you need:

14 medium garlic cloves, peeled
1 pound large shrimp, peeled,deveined, and tails removed
8 tabelsp. olive oil
1/2 teasp. table salt
1 bay leaf
if you want it spicy some dried chile roughly broken
1 1/2 teasp sherry ( or lemon juice and 2 tablesp dry white wine)
1 tablesp. choped fresh parsley leaves


mince 2 garlic cloves or press, toss with the prawns, add 2 tablesp. olive oil and salt, marinate 30 -60 min.
meanwhile smash (only smash them) 4 more cloves of garlic, heat with the rest of the oil over medium-low heat, stirring occasionally
until garlic is lightly golden brown ( 4-7 min)
alow oil to cool completly, remove the garlic, discard.
thinly slice the remaining 8 cloves. return the skillet to low heat, add garlic, bay leave and chile, cook untill
garlic is tender not browned ( 4 min or so), increase the heat to medium, add the prawns with the marinade, stir the
prawns sometimes. increase the heat to high and add the sherry ( or lemon juice and 2 tablespoons of dry white wine ). take the prawns from the heat and add the parsley, stir, and it’s ready to be served.
