this is soooo yummy on hot days and a healthy one too … hope you will enjoy this, as we did
you need :
1 ripe avocado
1 cup of chicken broth (or veggi broth)
1/2 cup of corn
1/2 of a red, yellow and green bell pepper ( finely chopped)
1/2 cup of fine chopped cucumbers
2 small tomatos chopped
1/2 onion
3 tablesp. coriander
juice of 1 lime ( and the cest of this whole lime)
1/2 cooked puntalette or orzo ( small pasta looking like rice)
3 tablesp. crème fraîche
1 garlic clove
1/4 teasp. ground cumin
1/2 teasp. cayenne pepper
salt and pepper
in a bowl add the broth,the avocado flesh and a tablesp. of the lime juice and mix it with an immersion blender. chill for 30 min in the fridge. in a blender add the onion,garlic, lime zest, crème fraîche and coriander, blend well, until you have a nice little sauce. add the sauce to the soup and mix well. add all other ingredients to the soup and season with the cayenne, cumin, left over lime juice and salt and pepper. TASTE IT!!! might need a little more cumin or salt, all depends how strong your broth was. chill again for 30 min you can add some shrimp on top or some feta cheese crumbles and baked tortilla chips….

I’m excited to try this! I have almost all the ingredients in my kitchen already, but there are a few things I can’t get here, like limes (I didn’t know that limes didn’t exist in Chile before I moved here!), so I’ll have to make some substitutions.
When do you add the orzo? Also, what is used to season the shrimp pictured?
