quick rosmary garlic lamb chops

lamp chops at it’s finest

 

 

what you need:

4 lamb chops

2-3 twigs of fresh rosemary

6 garlic cloves (roughly chopped for an easy take out)

5 tablesp. of  good olive oil

salt and pepper for seasoning

 

wash the chops and pat them dry with a paper towel. heat up the oven slightly so you can let the meat rest after cooking. season the chops good with salt and pepper. heat up the olive oil to a medium high heat. add the the garlic and the rosemary twigs. brown the garlic and the rosemary untill they are golden brown. remove the twigs and the garlic ( you can eat them if you like, the twigs get really crisp, just season them a bit with salt). now that the oil has some flavor, heat it up to high heat (lightly smoking) brown the chops for 2 1/2 min on each side, let them rest in a warm oven for about 10 min.

ps: the chops are tasting very good with an original greek tsatsiki: take 1 cup greek yogurt, press 2 garlic cloves in it. add 1 1/2 tablesp. of good native olive oil, 1/2 tablesp. of lemon juice and stir. add 2-3 tablesp. of chopped parsley and 1/4 cup of a shredded cucumber. mix all well and  chill for 30 min.

    These pictures make me hungry! I loved the idea that you used fresh herbs, since nowadays some prefer to use powdered seasonings that can be bought over the counter.
