ovenratatouille with sausage
this is super simple, and for lazy days…which i have sometimes 🙂
you will need:
about 1 pound or 600gr potatoes
1/2 pound 300gr of eggplant ( or tomatoes if you dont like eggplant)
1 zucchini
1 red bell pepper
1 yellow bell pepper
1/2 tablesp. provencal herbs ( or italian herbs if you can’t find it)
1 garlic clove minced
1/2 onion minced
3 tablesp. olive oil
1 tablesp. of tomato paste
1 cup of strong broth ( veggie or chicken, doesn’t matter)
1 teasp. salt
1/2 teasp. of pepper
and sausage of your choice, you can use bratwurst, italian sausage or bulk sausage
set oven to a 350F/180 C
peel the potatoes, wash all veggies, and cut them all into chunks. in a bowl, mix the oil with the herbs,salt,pepper,garlic and onion. add the veggies and stir them until they are well combined with the oil and herbs. add the tomato paste to the broth and stir until dissolved. add the veggies into a deep baking dish. add the broth into the dish ( just on the side not over the veggies). lay your sausage on top of the veggies. bake for 50-60 min

ps: after baking there will be an amazing broth left. keep it and make a little soup for the kiddos, just add abc pasta and cut up some wieners 😉
